Cream cheese caramelized onion dip is packet onion dip made the way it should be: three red onions in half-moons cook low for 30 minutes in 40 g of butter with four cloves of garlic and two finely chopped rosemary sprigs until jammy, like the base of onion soup. The processor turns them into a dip with real body — 240 g of beans, 180 g of cream cheese, a teaspoon of salt, a third of black pepper, half a lemon’s zest and juice, and two tablespoons of olive oil. Served cold on toast, thick and smooth, with the lemon cutting through — this is the one that vanishes first. Serves 4.

    Strip and finely chop the rosemary — a fine chop keeps it subtle. Chop the garlic small so it cooks evenly.

    Slice the onions into half-moons for slow cooking.

    Melt the butter in a pan; as it bubbles, its water cooks off. Add the onions, rosemary and garlic.

Thirty minutes on low is the entire recipe — the onions must go jammy and sweet, like the ones you would start an onion soup with; browning them fast reads burnt in a cold dip. The beans are invisible in the finish but do the structural work, giving body without more cheese. And taste after chilling, not before: cold mutes salt, so the teaspoon that seems bold warm lands right once refrigerated.

Variations

  • Bean choice. Any mild canned bean does the body job — white beans blend the smoothest, chickpeas add a faint hummus lean. Drain them well either way; can liquid loosens the dip more than you expect.
  • The onion-soup topping. The recipe card version keeps back a spoonful of the caramelized onions as a topping instead of blending everything. It costs nothing and makes the toast look like it came from a bistro — worth doing when serving guests.
