Crispy apple tortilla triangles are apple pie with the hardest part deleted: flour tortillas stand in for pie dough. The filling cooks in one pan in about 15 minutes — cubed firm apples fried in 70 g of butter to a toasty edge, brown sugar, a whole spoonful of cinnamon, vanilla, lemon zest in ribbons — then a raw, lemon-tossed handful goes back in with a cornstarch slurry, so every triangle holds soft caramel apples and firm fresh ones side by side. Egg seals the folded seams and glazes the tops, a sprinkle of brown sugar bakes into a crackly shell, and 15–20 minutes at 200 °C turns the tortilla into something that snaps and tears like real pastry. Makes 4 triangles.

    Peel and core the apples, then cube them small and even — even pieces soften at the same speed, and small means fast.

    Set one handful of raw cubes aside in a bowl and toss with about a tablespoon of lemon juice — the acid keeps them pale and firm.

    Melt the butter in a pan over medium heat and add the bigger batch of apples — butter gives them a toasty, nutty edge.

    Stir and cook about 5 minutes. They throw off juice at first; keep going — it cooks right back down.

    Add the brown sugar, the whole spoonful of cinnamon and the vanilla.

    Zest the lemon in long, slow strokes so it comes off in ribbons, scrape it into the pan and squeeze in the juice of the remaining half.

    Stir until the sugar melts into a syrup, then give it a few minutes more to a deep caramel gold. Add a pinch of salt.

    Mix the cornstarch with the water into a thin, milky slurry.

Be generous with the egg on every seam — any dry spot is a spot that pops open in the oven, and the tops get one more coat purely for that deep bakery gold. The rack matters: air underneath crisps the base instead of steaming it. And the pinch of salt at the end of the filling is what everyone forgets — it wakes the sweetness up. The hardest part of the whole recipe is honestly the wait: straight from the oven the filling is lava, and the shell crackles best after a few minutes of cooling.

Variations

  • Air-fryer finish. The triangles take well to an air fryer: same egg wash and sugar, 180 °C in a single layer, and start checking around 8–10 minutes — the fan browns the tops faster than an oven. Keep the seams up so they stay sealed.
  • À la mode. The corner-piece analogy begs for it: a scoop of vanilla ice cream against the warm triangle, or a spoon of the caramel that gathered in the pan drizzled over. A pinch of extra cinnamon in whipped cream works the same way.
