A can of corn turned into a crunchy, lightly spicy snack. The kernels are already cooked, so the air fryer only has to give them a crust: toss them with a tablespoon of cornstarch, two tablespoons of paprika, half a teaspoon of chili powder and salt, add a little olive oil, spread in the basket and cook at 190 °C / 375 °F for 12–15 minutes, shaking halfway. Sweet kernels, salty coating and a small kick. Scatter over salads, tuck into tacos or eat by the bowl. Serves 2.

Thin ham slices stand in for pastry here: four small cuts around each slice let it fold into a foil muffin liner without tearing, forming a cup that holds drained canned corn, a small piece of butter and a heap of shredded mozzarella. Draining the corn well matters, so the cups don't turn watery as they bake. The butter melts down through the kernels, keeping the filling rich rather than dry. Bake at 180°C (350°F) for about 15 minutes, until the cheese is golden on top and melty in the middle; the foil liners make each cup easy to lift out.

Crispy Corn Waffles

Four ingredients turn a can of corn into a savory waffle wrapped in browned cheddar. One egg and 2 tbsp of flour hold the whole kernels together, while the grated cheese does the real crisping: it melts first, then firms into a crunchy crust against the hot plates. Drain the corn thoroughly and pat it dry if needed, because wet kernels steam in the iron instead of crisping. Give the waffle the full 6 minutes so the cheese has time to set, and look for deep golden edges before serving. Thawed frozen corn or fresh kernels work just as well, dried first.
