Parmesan potato stacks are the party build: thin, even rounds — unrinsed, because the surface starch is the glue — tossed with salt, dried thyme, paprika, pepper, olive oil and half a cup of grated Parmesan, stacked into little towers on parchment and baked 25 minutes at 200 °C, then rested 5 minutes while the starch sets them crisp. A Paris restaurant was layering potatoes like this back in the 1870s — pommes Anna, one portion at a time. Serves 4.

Tortilla Kebab Sticks

These baked kebab sticks are layers of tortilla and seasoned beef, stacked, sliced, and skewered so every bite has crisp bread and juicy meat. Grating the onion instead of chopping it keeps the meat layer smooth enough to spread thin, and the shredded cheddar melts through as it bakes to bind each layer. Trim the tortillas square first; straight edges stack flush and the sticks hold their shape on the skewer. Bake at 180°C (350°F) for 15 minutes, brush with barbecue sauce, then give them 10 minutes more. They are done when the sauce turns sticky and the tortilla edges look dark and crisp.

Camembert Bacon

A whole camembert stuffed with garlic, honey and dried herbs, then wrapped in a woven bacon mat and baked until the outside crisps and the centre turns molten. The weave is what makes it work: pressing the strips flat with a rolling pin between two sheets of parchment locks them together, so the wrap holds tight and the melting cheese stays put. Bake at 180°C (350°F) for about 25 minutes, until the bacon is deep golden on all sides. Serve it hot, while the middle still flows.
