Sparkling Water Bread Rolls with Bacon Maple Butter
55 min16 servings
Sixteen bread rolls made with no yeast and no kneading: flour, salt and baking powder mixed with two bottles of sparkling water, rested, cut into pieces, shaped and baked at 230 °C (450 °F) for 25 minutes. While the dough rests, a block of butter is softened under a hot glass and mixed with slowly rendered bacon, its fat, maple syrup, garlic and chives, then set in an ice cube tray to melt into the hot rolls.

One recipe from start to finish: the dough mixed with sparkling water, the rest, the bacon maple butter made while it rests, shaping without extra flour, seeds on a misted top, 25 minutes in the oven and the butter cube on a hot roll.
