Restaurant-Style Golden Pork Fried Rice at Home

One technique video, one upgrade: restaurant golden pork fried rice built on separated eggs. The yolks are whisked and stirred through cold rice until every grain wears a gold coat that fries dry on full heat — “gold wrap silver” — while the whites scramble into bouncy pieces in crispy-garlic oil. Smoked pork belly renders into the base, half a teaspoon of chili paste blooms in the fat, soy roasts on the hot rim of the wok, and the crispy garlic chips land on top. If you’ve been making fried rice with whole eggs, this is the version the comments kept asking for after our egg fried rice.
