A ketchup dip is the trick behind these barbecue-style air-fryer nuggets: it stands in for beaten egg, gluing the panko to the chicken while baking a tangy, faintly sweet note into the crust. Cut the breast into chunky pieces rather than thin strips; the extra thickness keeps the center juicy while the outside crisps at 180°C (350°F). There is no oil bath and no egg wash, just chicken, ketchup, panko, salt and pepper. Give them 15–20 minutes, until the crumbs have deepened to golden brown and the thickest piece is opaque all the way through.

We cut the breasts into fat chunks on purpose. Small pieces cook through before the panko takes on color, and they turn dry. The ketchup layer needs to be thin but complete; anywhere it misses, the crumbs fall away in the basket and leave a bald patch that never crisps.

The step people rush is the single layer. Pile the nuggets up and the trapped steam softens the coating instead of drying it. We watch for the panko to go from sandy beige to a deep golden brown, usually closer to the 20-minute mark, and check that the thickest piece is opaque in the middle before serving.

Variations

  • Oven method. No air fryer? Spread the nuggets on a wire rack set over a baking tray and bake at 200°C (400°F) for 20–25 minutes, turning once halfway so both sides crisp.
  • Barbecue sauce coating. A smooth barbecue sauce works well in place of the ketchup and gives a smokier crust. Skip chunky sauces, though; the bits stop the panko from sticking evenly.
  • Storage and reheating. Cooked nuggets keep in the fridge for up to 3 days. Re-crisp in the air fryer at 180°C (350°F) for 4–5 minutes; the microwave turns the coating soft.
