Golden air-fryer mushrooms are the snack of the set, and the crust comes from a spoon of mayo: whole mushrooms tossed in a bowl with a few spoonfuls of mayonnaise, paprika, garlic powder, salt and black pepper, then 15 minutes at 180 °C. Mayonnaise is already an emulsion of oil and egg, so it clings where plain oil runs off and browns into a golden, aromatic crust while the mushrooms inside turn tender. Five minutes of prep, one bowl, one basket — a side or a snack straight from the air fryer. Serves 2.

    Put the whole mushrooms in a bowl and add a few spoonfuls of mayonnaise.

Mayonnaise is the trick, not a compromise — it is oil and egg already emulsified, so it stays put on the caps where brushed oil would drip through the basket, and the egg in it browns the way a glaze does. Whole mushrooms matter too: cut ones bleed moisture into the coating and it slides off. Single layer, always — a crowded basket steams.

Variations

  • Flavor turns. The mayo coat carries whatever you stir into it: smoked paprika instead of sweet leans barbecue, a spoon of grated parmesan bakes into a saltier crust, a dab of sriracha turns the whole batch gently hot.
  • Oven fallback. A 200 °C oven on a rack over a tray does the same job in about 20 minutes — the rack matters so air reaches the underside; on a flat tray the bottoms stay pale and wet.

Why mayonnaise instead of oil?

Because mayo is an emulsion — oil suspended in egg — so it clings to the caps in an even layer instead of running off, and the egg proteins brown into a real crust at air-fryer temperatures. Plain oil gives you roasted mushrooms; seasoned mayo gives them a golden jacket.

Do the amounts matter?

Loosely — the video itself measures nothing here. A few spoonfuls of mayo for a bowl of mushrooms, seasoning to taste; the coat should look like a thin dressing, not a batter. If mayo pools in the bottom of the bowl after mixing, you have enough.

How do I store and reheat them?

They are at their best straight from the basket — the crust softens as they sit. Leftovers keep 2 days airtight; give them 3–4 minutes back in the air fryer at 180 °C and the coat re-crisps surprisingly well. Skip the microwave; it turns them squeaky.
