Grilled stuffed mushrooms run on three textures: hollowed caps lightly salted inside, a filling of 150 g of cream cheese mixed with a teaspoon of Italian herbs, and a slice of bacon wrapped around each one — the bacon seals the filling in and does the crisping on the grill. Eight minutes over direct heat cooks the caps tender, renders the bacon crackly, and melts everything into one bite; grated parmesan lands on the hot mushrooms at the end and half-melts into a nutty, savory layer. Party food that eats like a restaurant appetizer. Serves 3.

Instructions

    Remove the stems to leave hollow caps, and lightly salt the inside of each one.

    Mix the cream cheese with the Italian herbs.

    Fill each cap generously with the mixture, keeping it within the mushroom’s edges.

Notes from our kitchen

The bacon is doing two jobs — it is the lid that keeps the cream cheese from escaping, and it is the crunch, so wrap it snug and seam-side down first on the grill. Keep the filling inside the cap’s boundary: overflow burns before the bacon crisps. And the parmesan goes on after the grill, not before — on the hot caps it softens and clings instead of scorching.

Variations

  • Oven or air fryer. No grill: 200 °C in the oven for 12–15 minutes or 190 °C in the air fryer for about 10 gets the bacon crisp — a minute under the broiler at the end mimics the direct-heat char.
  • Filling upgrades. The cream-cheese base takes additions well: the chopped stems sautéed dry, a little crushed garlic, or a spoonful of the parmesan mixed straight in. Keep it thick — a loose filling boils out through the bacon.

Frequently Asked Questions

Why wrap the mushrooms in bacon?

Flavor is the obvious half; the structural half is that the bacon belt holds the melting cream cheese inside the cap while the grill’s direct heat works. As it renders, it also bastes the mushroom in smoky fat and crisps into the texture the soft cap and creamy filling are missing.

Won’t the mushrooms go soggy on the grill?

Eight minutes over direct heat is calibrated so the caps cook tender while their moisture evaporates on contact — no pan for it to pool in. Salt the caps lightly and grill straight away; salted mushrooms left waiting will weep water before they hit the heat.

Can I prep them ahead for a party?

Yes — stuff and wrap the caps up to a day ahead and keep them refrigerated on a tray under film; grill straight from the fridge, adding a minute. Grilled leftovers keep 2 days airtight and re-crisp in an air fryer at 180 °C for 3–4 minutes.
