
Cream Cheese Caramelized Onion Dip
Cream cheese caramelized onion dip is packet onion dip made the way it should be: three red onions in half-moons cook low for 30 minutes in 40 g of butter with four cloves of garlic and two finely chopped rosemary sprigs until jammy, like the base of onion soup. The processor turns them into a dip with real body — 240 g of beans, 180 g of cream cheese, a teaspoon of salt, a third of black pepper, half a lemon's zest and juice, and two tablespoons of olive oil. Served cold on toast, thick and smooth, with the lemon cutting through — this is the one that vanishes first. Serves 4.
