
Coffee-Marinated Steak with Reverse Sear
A cheap, tough cut turns into a steak that cuts like filet mignon with one step you already have at home: coffee. Brew it strong — just under an ounce of finely ground coffee for every five fluid ounces of water, enough to cover the steaks — let it cool completely, then seal the steaks in a zip-top bag with it, grounds and all, overnight. The acidity does the tenderizing; you feel the difference under a finger before the pan. Rinse, dry thoroughly, season with salt, pepper and olive oil, then reverse-sear: 15–20 minutes at 110 °C on a rack to warm the middle, a screaming pan with oil for the crust, garlic butter basting, and 5–7 minutes of rest under foil. Pink inside, soft under the fork. Serves 2.
